This bright red purée includes zucchini and eggplant pieces and, of course, hot peppers with seeds that pop under the teeth. The caramelized flavour of roasted bell peppers quickly gives way to an intense heat much appreciated by spice lovers.
Uses: Use this hot chili purée to spice up all your favourite dishes: try it on pizzas, sandwiches and burgers. It is the ideal secret ingredient to add flavour to a bland soup or give a kick to a tomato sauce or a risotto.
Artisan: The De Laurentiis family owns an artisanal business in the Abruzzo mountain region. For two generations, it has been drawing on traditional ingredients and know-how to offer products with an authentically Italian taste. The family grows organic tomatoes, saffron and other seasonings on its own plots of land, and turns them into sauces and condiments thanks to a veritable regiment of cooks who busily tend the ovens.
