Olives are harvested once a year in any given region. In Spain, Italy, Greece, Portugal — that harvest happens in the fall, typically September/October through December. In Australia, Chile, South Africa, Peru — the southern hemisphere — the harvest is in the spring, typically March/April through to June.
Most stores and grocery chains buy a single shipment, put it on the shelf, and sell it until it runs out. By the time you buy a bottle, it could be a year or two old — or older.
