1 cup raw pumpkin seeds
1 cup unsweetened shredded dried coconut
½ cup maple syrup
½ cup Chilean Favolosa EVOO (or a Medium/Robust EVOO)
2 teaspoons Amaretto
½ cup light brown sugar
¼ cup sesame or flax seeds
1 teaspoon fine sea salt

Mix all together in a bowl, spread on a cookie sheet and bake for 50 min at 300F stirring occasionally.
