Vegan Apple Galette



Ingredients

For the Dough:

1 1/4 Cups flour (AP)
1/4 tsp salt
1 Tbsp maple syrup
1/4 Cup refined coconut oil, solid
1 tsp Butter Infused Olive Oil
6-8 Tbsp non-dairy milk (note the steps)
2 tsp honey & 2 tsp non-dairy milk (for glazing outside of dough)

For Filling:
3 medium baking apples, peeled and cored
2 Tbsp maple syrup OR honey
1 1/2 Tbsp Gravenstein Apple White Balsamic
1 tsp ground cinnamon
1 1/2 Tbsp lemon juice

Directions - Filling:

Preheat oven to 400 degrees F. Line a pizza pan or large sheet pan with parchment paper.

Peel & slice apples into 1/8 of an inch slices and place in a large bowl. Add remaining filling ingredients & stir to fully coat the slices. Set aside.

Dough:

In a large mixing bowl, add flour & salt and combine. Add solid coconut oil in small chunks, then mash and mix into the flour using a large fork until small pea-sized can be seen & the flour has more of a brown sugar consistency.

Add Butter Olive Oil & maple syrup, stir and mash to combine.

In 1 Tbsp increments, add the milk. Mix until incorporated, then add more, repeat until it comes together in large chunks & holds together when squeezed. Using your hands, form the dough into a smooth ball. Flour your working surface and place the ball on it.

Flour your rolling pin and the top of the dough LIGHTLY and roll out the dough into roughly a 1/8 of an inch thick, 12 inch circle. It doesn't have to be perfect, make it rustic! Gently pick up the rolled out dough and place it on the prepared baking sheet.

Place the apple slices and juices into the middle of the dough circle, leaving about 2 inches of plain dough around the edge. Fold up the edges of dough, pleating it as you go, pinching the tops of the pleat to help it stay put.

Make the glaze with the 2 tsp honey and 2 tsp non-dairy milk. Use a basting pastry brush to apply the mixture into the folded edges of dough.

Bake for 15 minutes @ 400 degrees, then reduce the heat to 375 degrees and bake for another 30-40 minutes or until the crust is golden brown and apples are cooked through.

Let it cool on the pan completely before serving.
