Chicken & Mushrooms - From The Olive Oil Co. Kitchen

Ingredients:
4 boneless skinless Chicken Thighs
Favuzzi Bologna Salt (Available at The Olive Oil Co.)
1/2 tsp Dried Oregano
Medium Intensity Extra Virgin Olive Oil
1 Cooking Onion, sliced thin
1 Shallot (if desired), sliced thin
Approx 30 Button Mushrooms
White Wine (Riesling works great)

Directions:
Preheat oven to 375 F.

Heat oil in an oven safe frying pan. Season chicken thighs with bologna salt & oregano. Brown chicken thighs. Remove to dish.

Brown onions and mushrooms in same pan. When browned pour in 1/2 to 3/4 cup white wine. Deglaze pan.

Add chicken thighs back in pan. Move to the oven for 15-20 minutes.

Remove & Enjoy!
