2 Cups Farfalle Pasta (also called Bowtie, Butterfly. Or use whatever small pasta you prefer, check our pasta list)
1/4 to 2/3 Cup thinly sliced red onion
1 Lg heirloom tomato, diced OR 15 cherry tomatoes, diced
1 Cup cucumber, diced
3/4 Cup crumbled feta
1/4 Cup Oregano White Balsamic
1/4 Cup Garlic Infused Olive Oil
2 Tbsp A-Premium White Balsamic
2 tsp lemon juice (1/4 slice of lemon, squeezed)
Salt & Pepper, to taste
Chop all of your veggies.
Whisk together all of the dressing ingredients and set aside.
Bring water to a boil, add salt (be generous, salting the water gives the pasta true flavour). Add pasta, cook for 10-12 minutes. Once pasta is al dente (not too hard or soft) add to your salad bowl.
Add veggies, crumbled feta, and dressing to the salad. Toss and serve.
Serves 3-4 as a main. Serves 4-6 as a side.
