Italy-Inspired Sandwich

While staying in Torri Del Benaco in the Lake Garda region, we visited a deli spot that also made sandwiches. As some of us didn't quite know what to order, I walked in with Google translate on my phone saying, "Make me your favorite sandwich" to the man behind the counter.

This sandwich...is now one of my all-time favorite sandwiches! Just a note, the amounts are pretty relative, and some substitutions can be made.

Ingredients - Quanto Basta style (however much you feel, sandwiches are different for everyone)

For Zucchini topping

Zucchini, sliced thin lengthwise
1 to 2 Tbsps EVOO for sautéing in the pan
Favuzzi Italian Herb Mix
Salt, to taste

Italian sandwich bread of choice (I recommend a nice focaccia or ciabatta bun.)
Divina Black Olive Spread
Soft Ricotta Cheese
Cayenne Olive Oil
Parma Ham or Prosciutto

Directions
Heat up the EVOO in the pan on Medium heat.

Slice up your zucchini, then sauté in the pan on medium heat for 10 minutes, salting and seasoning it halfway through. Once done and softened, remove from the pan and place in a bowl, then place in the fridge to cool it down a little bit.

Slice up / prepare your Italian sandwich bread. On the bottom half, spread the olive spread on. On the top half, spread the ricotta.

Drizzle the spicy Cayenne Olive Oil on both sides, if you like it spicy, do more!

On the olive spread side, layer on the prosciutto, then place the zucchini on top of that. Place the top on, slice through the middle and appreciate the beauty of the sandwich, then enjoy!
