Not all balsamic vinegar is the same.
Traditional balsamic vinegar from Modena is made from cooked grape must — the juice and skins of Trebbiano grapes, among many others.
In the Solera method, the vinegar is aged in an array of barrels made from different woods — typically oak, chestnut, cherry, mulberry, and juniper. Each year, a portion is drawn from the oldest barrel for bottling, and that barrel is topped up from the next oldest, and so on down the line. The result is a vinegar blended from many ages, with the average age gradually increasing over many years.
