In the picture above, we have two UP-certified extra virgin olive oils here. Both meet the Ultra Premium standard. Both have the chemistry to prove it. But taste them and they're completely different.
One is from Portugal — a Picual varietal. It has this bold, grassy, peppery profile. You get hit with a strong pepper finish — that's the high polyphenol content doing its thing. This oil is robust. It's incredible on a steak, roasted meats, strong cheeses, anything that can stand up to it.
But then you taste the other one — a Coratina from southern Italy. Same UP certification, but the flavour is more complex — floral notes, a little more bitter up front, and then that warmth spreads across your palate. This is beautiful as a finishing oil, over pasta, on bruschetta.
