When you want something sweet, but don't want the refined sugar, an easy rhubarb crumble is the way to go! This simple dessert can also be made to suit your dietary needs.
Filling Ingredients
2 Cups fresh or frozen rhubarb
2 Cups mixed berries, frozen (or for an apple version, swap for thinly sliced apples)
2 Tbsp Maple Syrup
1 Tbsp Blueberry Dark Balsamic Vinegar or other berry flavoured balsamic (for the apple version, use the Red Apple Dark Balsamic Vinegar)
1/2 tsp vanilla extract
1 tsp cornstarch or flour
1 tsp cinnamon
Topping Ingredients
1 & 1/2 Cups Oats
1/2 Cup flour (can make this Gluten-free, or use whatever flour that works for you.)
1 tsp cinnamon (or more or less, to taste)
Pinch of salt
2 Tbsp Butter Infused Olive Oil
3 Tbsp Maple Syrup
1 Tbsp Maple Dark Balsamic
Directions
First, preheat your oven or toaster oven to bake at 350 degrees.
For the filling, mix all those ingredients together in an 8x8 baking dish.
In a separate bowl, combine the dry topping ingredients. After adding the wet topping ingredients, combine thoroughly, pressing down on the mixture as you go so everything sticks together nicely.
When the oven is ready, bake for 40 minutes. To make sure it is fully cooked, find a piece of rhubarb and see if a fork goes into it easily. If the topping is golden brown, it should be ready to enjoy!
Let it sit for a few minutes for it to cool down, of course.
