Kale Garlic Walnut Pesto

Ingredients:
2 Cups kale, stems removed
1/3 walnuts, lightly toasted
4 cloves garlic, peeled
1/2 Cup Medium EVOO
1/4 Cup grated Parmesan cheese
A couple pinches of salt 

Directions:
In a food processor pulse kale, walnuts, and garlic until combined. While machine is running slowly add in olive oil. Add in Parmesan cheese, and salt to taste, and continue to blend until all ingredients are blended thoroughly.  Pesto is wonderful served with pasta, potatoes, vegetables, in scrambled eggs, and on meats.
