Do you ever crave some crispy onion rings, but don't have the fancy cooking tools or an air-fryer? Well here's a recipe that doesn't take long, and all you need is an oven and the Chipotle Infused Olive Oil! You can even swap ingredients to make it GF or Vegan.
Note: We tried a batch with the Tuscan Herb Olive Oil. Also turned out delish, but please, get adventurous and try other oils like the Baklouti Green Chili, Olive Wood Smoked, or even Mushroom & Sage!
Ingredients
1 yellow onion - trim the ends off, peeled, cut cross-wise into 1/2 inch slices
2 Egg Whites (possibly 3, depending on the size of the onion)
2 Tbsp milk (you can use non-dairy if you'd like)
1 pinch cayenne pepper (or paprika)
2 Cups panko bread crumbs, more if required
2 tsp The Olive Oil Co. Chipotle Infused Olive Oil
1/2 Cup all-purpose flour (use GF flour if need be)
1 tsp Salt and Pepper, or to your taste
Directions
Preheat your oven to 425 degrees F.
Separate the onion slices into rings. Let them soak in water for 15 to 30 minutes. This helps to take away the harsh bite of the onions.
Whisk the egg whites and milk into a small and deep bowl (easier for dipping the rings in) until thoroughly combined. Season with the pinch of cayenne or paprika.
Place panko crumbs into a separate bowl. Drizzle the Chipotle Olive Oil in with the bread crumbs, and mix it in.
Place the separated onion slices into a large resealable bag. Add the flour, salt, and black pepper. Seal and shake the bag to coat all onion slices well.
Dip the floured onion slices into the egg-milk mixture, shake off the excess, then place them in the breadcrumbs and toss them until coated with the Chipotle crumbs.
Transfer the crumby onion rings (HA, crumby...) to a large baking tray. (You may need two trays.)
Bake in the oven for 15-17 minutes. Keep an eye on them until they're lightly golden brown and crispy to the touch.
