Ingredients
1 1/2 Cups tomato (fresh or canned) chopped
1 small onion, chopped
1/4 cup almonds, slivered
3-4 cloves of garlic, minced
1 1/2 cups water or broth of your choice, prepared
1-2 Tbsp Extra Virgin Olive Oil OR Persian Lime Olive Oil for a citrusy zing!
1 1/2 Tbsp Santa Fe Chipotle Honey Kanel Seasoning
Directions
Heat the olive oil to a medium heat, then add onion & garlic and saute until soft.
Add slivered almonds & Santa Fe Chipotle Honey Seasoning and continue to sauté for 2 minutes.
Add tomatoes & water and simmer for 15 minutes.
Blend with an immersion blender and serve.
Optional: garnish with roasted pumpkin seeds or croutons.
