Ingredients
3 eggs
¾ cup sugar
1 cup ORANGE OLIVE OIL - Blood Orange, Navel Orange, or Sweet Valencia Olive Oil
2 tsp vanilla extract
2 cups grated, unpeeled zucchini
3 cups AP flour
1 tsp. baking powder
1 tsp baking soda
1 tsp salt
1 ½ tsp ground cinnamon
½ tsp nutmeg
1 cup nuts or raisins (optional)
Directions
Beat eggs – add sugar, oil & vanilla. Stir in zucchini.
Combine dry ingredients, and slowly mix with wet ingredients. Stir in nuts or raisins if desired.
Fill 2 greased loaf pans or one greased bundt pan. Bake at 350 for 45-55 minutes. Cool in pan 10 minutes and turn out on baking rack to cool.
