When comfort food season arrives, our Red Apple Balsamic Pork Roast can definitely hit the spot! Also using the Butter Olive Oil, this is the perfect dish for those cool days, full of sumptuous flavour.
Ingredients
3 Tbsp. The Olive Oil Co. Butter Infused Olive Oil
3 lbs pork roast (with bone), can also be done with a roast without a bone.
½ tsp. Himalayan Pink Sea Salt
¼ tsp. ground pepper
⅓ cup chopped shallots
4 large apples or pears, cored and sliced
2 bay leaves
¾ cup apple cider
½ cup The Olive Oil Co. Red Apple Balsamic Vinegar
4 Tbsp. maple syrup
Directions
Preheat oven to 400°F.
Salt & pepper pork roast.
Heat Butter Infused Olive Oil in a frying pan. Brown the pork roast on all 4 sides, then place in a large oven safe pot or ceramic roaster.
Add shallots to the hot oil in the frying pan and cook for 3 minutes.
Combine shallots & oil, pears, bay leaves, cider, Red Apple Balsamic & maple syrup in a bowl or in the pot with the roast.
Roast in oven for 1 hour (time may depend on the size of your roast), basting occasionally. Add sea salt & pepper to taste.
When serving, ladle the sauce in the roasting pot over the slices.
*Internal temperature away from bone or middle of the roast should be 145F*
